55 days — This variety yields crimson-red flesh with flattened globe-shaped roots and tall, bright, dark green succulent tops. You can use the immature "baby" leaves in mesclun or salad mix, tender leaves for greens, and the dark red roots for salads, pickled, borsch or cooked.
Beets are rich in the beneficial carotenoid lycopene, which are effective at scavenging the molecules that have been linked to cancer-causing free radicals. Bright red vegetables are also shown to be useful in increasing blood flow and circulation which is beneficial for heart and lung health.
'Early Wonder' first appeared in the United States seed trade simultaneously in the 1911 catalogs of F. H. Woodruff & Sons and S. D. Woodruff & Sons. It was also known by 'Boston Crosby' and 'Nuttings Gem'.[1] Each packet contains four grams, which is approximately 200 seeds. Each ounce contains about 620 seeds.
